Vietnamese House Mayo

I wanted homemade mayo so that I can have fresh mayo instead of the store-bought kind with all the preservatives. Also, I didn't want to get in the car and drive to the store to get mayo. I decided to go gung-ho and make it using a hand whisk. My wrist was aching so badly at the end that I seriously thought making mayo would be the cause of my early demise. I don’t recommend whisking by hand to make mayo. Do yourself a favor, use modern technology.  Use a food processor, hand mixer, or better yet, an immersion blender. You will be glad you did.

Vietnamese House Mayo Recipe

This recipe makes about I cup of mayo


  • 1 egg yolk at room temperature
  • 3/4 cup vegetable oil
  • 1.5 tablespoons of fresh lemon juice
  • A pinch of salt


Combine everything together in a long cylindrical cup (usually comes with the immersion blender) then blend. Keep mixing until you get mayonnaise. Simple as pie.  No need for emulsification. You are welcome.
