The snack food of my people: grilled corn slathered with scallion oil.
This recipe reminds me of my favorite childhood memory … of when I set the kitchen on fire. I was helping my mom make scallion oil on the stove. As soon as Mom left the kitchen, the pan of oil caught fire. For a 10-year-old, I thought I was helpful when I threw water in the pan full of oil. But as soon as the water hit the hot oil, flames violently flew upward. The flames got so high that it touched the ceiling. Dad saw the bright flames radiating in the kitchen. He ran to drench a large bath towel with water and then threw the damp towel across the stove. This successfully subdued the flames. If no one was around, I would have added more water. I now only make scallion oil in the microwave.
Grilled Corn with Scallion Oil Recipe
- 4 corn on the cobs; grilled
- ¼ cup of vegetable oil
- 3 stalks of scallions/green onions thinly sliced
- Pinch of salt
- Combine the vegetable oil, green onions and salt in a microwave-safe bowl. Microwave for 1 minute.
- Using a basting brush, slather up the grilled corn with this awesome oil.
