I really love cooking with vegetables from the garden. It's fresh, organic, and readily available. I simply just walk to my backyard, pluck a few vegetables from the vine and snip off a few sprigs of herbs. That's my trip to the "grocery store."
Tonight I made a simple pizza with a tomato sauce made from tomatoes gathered from the garden. I peeled and deseeded the tomatoes, and cooked them with a bit of Italian seasoning, Worcestershire sauce, salt, garlic and shallots. I let it reduced on a low simmer until it got thick and flavorful.
The pizza crust was a delicious flatbread. I slathered that with the homemade tomato sauce and topped it with fresh mozzarella cheese. The pizza went into the oven on broil for a few minutes, just enough for the cheese to completely melt. For the final touch, I sliced up some basil and sprinkled it on top of the pizza as soon as it came out of the oven.
Nothing beats homemade and homegrown food. Simply delicious.
