Smoked Salmon Fettuccine with Asparagus

My dad has been giving me some really delicious appetizer meats such as salami, prosciutto and smoked bacon.  Because of the price tag left on these packages, I doubt he bought them. I have concluded he works for a restaurant mob who smuggles Italian meats. Or the more realistic explanation, he has a good friend in the deli business who gives him leftover goodies. Wherever he gets them, he who giveth freebies shall not be questioned.

The other day, I received smoked salmon. It was a tiny piece but the price tag on the package suggested it was made of pure gold. As much as I would have loved to stuff it all in my face and tell the rest of my family “What smoked salmon?”,  I came up with a dish that stretched the small piece of delicious goodness for all to share: Smoked Salmon Fettuccine with Asparagus – an extremely simple and elegant dish. Pair this dish with your favorite white wine and you got yourself a romantic dinner for two ... and plenty of leftover for lunch because the below recipe really serves four. Enjoy!

Smoked Salmon Fettuccine with Asparagus

Smoked Salmon Fettuccine with Asparagus Recipe

Ingredients:

  • 1 tablespoon salted butter
  • 1 tablespoon olive oil
  • 2 tablespoons shallots, minced 
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 2 teaspoons chicken bouillon powder in 1/2 cup hot pasta water
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups asparagus, sliced into 1-inch pieces at an angle
  • 1 cup chopped smoked salmon
  •  1 pound cooked fettuccine
  • 2 tablespoons chopped chives

Directions:

  1. In a large pan, melt the butter in the olive oil over medium high heat
  2. Sauté the shallots and garlic until fragrant, around 1 minute
  3. Add the wine and bring the pan to a boil; reduce heat to a simmer and cook until liquid is reduced by half
  4. Add the chicken bouillon powder to the hot water and add the liquid to the pan 
  5. Simmer until the liquid is reduced by half
  6. Add the cream, salt and pepper
  7. Simmer until until the sauce reduces and thickens.
  8. Stir in the asparagus and cook for 1 minute
  9. Add in the smoked salmon
  10. Add in the cooked pasta and toss gently
  11. Garnish with chives
