Vietnamese Sweet & Sour Soup with Squid (Canh Chua Muc)

Time and time again, I proclaimed Canh Chua is the best Vietnamese soup for a Vietnamese home cooked meal. I just love the smorgasbord of bold flavors: sweet, sour and spicy. Plus, you can use whatever protein and vegetables you like. The only requirements are the tomatoes (for the vibrant red color), and the green aromatic garnish of either Thai Basil, Culantro, or Rice Paddy Herbs. The rest is entirely up to you. For this version, I use squid for the protein and thin Enoki mushrooms for the vegetables. And of course, loads and loads of Thai chili for that wonderful kick of heat. Nothing makes me happier than a very spicy Canh Chua that makes me cry.

Vietnamese Combination Dry Egg Noodle Recipe (Mi Kho Thap Cam)

Vietnamese Combination Dry Egg Noodles, or Mi Kho Thap Cam, is similar to the more well known Hu Tieu Kho but except instead of Hu Tieu noodles, a chewy and clear noodle made from tapioca flour, it is made with Mi noodles, a noodle made from eggs and wheat flour. The toppings are the same as in Hu Tieu Kho, which is pretty much a smorgasbord of proteins. It is served dry. However, it comes with a small bowl of Hu Tieu broth on the side for slurping. The dish also comes with a soy sauce dressing that you pour over the noodles. You mix everything together, thoroughly incorporating the bean sprouts and Chinese chives on the bottom of the noodles.

Vietnamese Stuffed Calamari (Muc Nhoi Thit)

Vietnamese stuffed calamari or Muc Nhoi Thit is one of my favorite appetizers. It is calamari stuffed in a pork, noodle and mushroom mixture. The calamari is first steamed. Then it is quickly fried or grilled to get a nice sear and lovely color on the outside. I love eating these stuffed calamari wrapped in lettuce and Vietnamese herbs with a dipping sauce on the side. It is the perfect Vietnamese appetizer for a fancy occasion.
