Easy Pan-Fried Tofu & Eggs (Đậu Hũ Trứng Chiên)

During this difficult time as we all do our part to flatten the curve, many are stuck inside with limited groceries. Here is a recipe that you can easily pull together with ingredients that you most likely have in your fridge and pantry. Even if you don’t have tofu, the silver lining is that tofu is still abundantly available on American grocery store shelves (at least around my neck of the woods). If you can’t find toilet paper, cheer up and grab that piece of tofu. It’s not so bad afterall.

Dau Hu Trung Chien is a recipe that I have on my dinner rotation at least once a week. It’s a great source of protein without all the fuss. If you are new to tofu, this is the recipe to convert you. The tofu in this recipe is lightly seasoned with salt and pepper, dipped in an egg mixture then pan-fried to golden perfection. To make it more scrumptious, I serve mine with a sweet and savory soy dipping sauce. Tofu and dipping sauce recipes are below. Enjoy!

  • 1-1/2 teaspoons sea salt (divided)
  • 1/2 teaspoon ground black pepper (divided)
  • 2 eggs
  • 1 teaspoon sesame oil
  • 1 scallion (slice thinly; separate whites and greens)

Instructions

  1. Drain tofu. Wrap tofu in paper towels and gently press together to remove excess moisture. Cut tofu into 12 small cubes (4x3).
  2. Liberally season tofu cubes with 1 teaspoon salt and half of ground pepper.
  3. In a small bowl, crack two eggs. Add remaining salt and pepper, sesame oil and whites of scallion oil. Mix until combined. Dip tofu into egg mixture and set aside.
