Bò Bía, is a northern Vietnamese spring roll appetizer that was most likely inspired by our Chinese neighbor. It’s a fresh rice paper roll, filled with thinly sliced eggs, Chinese sausage, jicama, carrots, dried shrimp, and Thai basil leaves.
